Friend: Roasted Okra
Bridesmaid: I’ve never seen that kind. I’ve only see the small, round, brown ones.
Come on folks…eat your veggies! Try new ones! I was meeting with a potential client last week and we were discussing different items for their heavy hors d’oeuvres stations. I suggested a Roasted Vegetable Platter because it is filled with yummy, colorful and seasonal vegetables including okra (and, no, not the small, round, brown kind!) They all agreed the vegetables were a great addition to the menu and we moved on to another discussion. Minutes later, the Father-of-the-Bride asked, “Does anyone here really want Okra on the vegetable platter?” He had obviously been discussing this in his head while the rest of us had moved on. Again, everyone agreed that none of the family and friends would like Okra and it would just be a waste! A WASTE! Really?
I’ve come to realize that Okra is THE Mis-Understood Vegetable. I used to think it was Beets, but times they are a changin’! So, tonight, for dinner, please give Okra a chance! Wash it, toss it in some Extra Virgin Olive Oil, dash a little Kosher salt and pepper on it, and roast it in the oven for a few minutes until it is bright green and cheerful! Enjoy! Then, help spread the word!
